BAKING BINGE : DEUX

Next... Cinnabons.
I woke up one morning with an INSANE craving for cinnamon buns. So I made them.
Yeast fermentation.
IT'S ALIIIVEEE!
 Sticky dough that's about to transform...
 into these awesome rolls.
Actually this crazy dough yielded about 15buns and doubled the size of my biceps with all the kneading.



 & bf requested for Shortbread Cookies.
 So cute right, and they're so easy to make!

We decorated them with my 63% cocoa chocolate couvertures HAHA.
 Can totally tell which are mine or his lor HAHA!
 I was contemplating on putting this up but it's too funny la!

Posting up recipe as requested from a few of you.
I guess I should take the tagboard down since all of you email or formspring me instead?
I've always thought emailing to be quite tedious hahaha.

Shortbread Cookie Recipe
Makes about 20 cookies
260 grams all-purpose flour
1/4 teaspoon salt
230 grams unsalted butter, room temperature
60 grams powdered (confectioners or icing) sugar
1 teaspoon pure vanilla extract

 In a separate bowl, whisk the flour with the salt.  Set aside.

In the bowl of your electric mixer (or with a hand mixer), beat the butter until smooth and creamy (about 1 minute). Add the sugar and beat until smooth (about 2 minutes).  Beat in the vanilla extract. Gently stir in the flour mixture just until incorporated.  Flatten the dough into a disk shape, wrap in plastic wrap, and chill the dough for at least an hour or until firm.

Preheat oven to 180°C with the rack in the middle of the oven. 
Line two baking sheets with parchment paper.

On a lightly floured surface roll out the dough into a 1/4 inch (.6 cm) thick circle.  Cut into rounds or other shapes using a lightly floured cookie cutter.  Place on the prepared baking sheets and place in the refrigerator for about 15 minutes. (This will firm up the dough so the cookies will maintain their shape when baked.) Bake for 8 - 10 minutes, or until cookies are very lightly browned. Cool on a wire rack.

Then, I suddenly remembered my childhood snack -
Japanese Shu Kurimu/ Choux à la Crème/ Cream Puff!
Mummy used to make this all the time because my dad loves 'em and her custard recipe is the best. No eggs!
 It's my first time making choux pastry from scratch and they turned out PERFECT
 SEE SO CUTE RIGHT HEHEHE!

While clearing up my baking trays and stuff one day, I found two madeleine trays that dad got from france for mum when I was 9. Madeleine trays were apparently hard to find in Singapore back then.
 Surprisingly, the trays looked so NEW and untouched even after 13 years?! Plus they were non-stick!

I used a recipe from the renowned french pâtisser, Pierre Hermé.
It's originally a chocolate-orange madeleine recipe, but I left some plain because my mum isn't quite a fan of choco. BUT, the choco ones turned out better!
I don't know why some people can't get madeleine humps LOL.
I didn't use any oven tricks or stuff like that?!
But the shell pattern isn't quite pronounce :(
Probably gonna get a new tray with deeper ridges.



Made these Chocolate Chip Cookies on the same day
because I just had to eat chocolate chip cookies.

& I attempted the notoriously finicky Espresso Macarons one night.
While putting them out to dry.
No photos of the end product because most of them turned out cracked :( My oven was apparently too hot or something. I'm gonna make them again till I succeed!!


Actually I made oatmeal raisin cookies last week but didn't take photos of them, since they're just to satiate my cravings and I was too lazy to go to subway. Oh and apple custard cupcakes too.


Can't wait till I bake again on friday or something! :D
