RECIPE: CORNFLAKE COOKIES

HELLO! Here's the recipe for cornflake cookies!
Can't remember where I originally got it from, but I added in some modifications like the corn flour because I wanted a crumbly, melt-in-the-mouth texture and oatmeal for more flavour.
Feel free to replace the corn flour with plain flour or omit the oatmeal and add in more cornflakes!
Cornflake Cookies
260g all purpose flour + 20g (1 ½ tbsp) corn flour
1 ½ tsp baking soda
¼ tsp salt
110g butter, room temperature
½ cup vegetable oil
100g white sugar
100g brown sugar
1 large egg yolk
1 tsp vanilla extract
40g crushed corn flakes
20g quick cooking oatmeal
30g raisins

Preheat the oven to 160°C and line a baking sheet with parchment paper.
Soak raisins in a bowl of hot water, strain completely after 15 minutes.
In a small bowl, whisk together flour, baking soda and salt.
In a large bowl, cream together butter and sugars until light.
Beat in egg and vanilla extract, followed by vegetable oil, mixing until smooth.
Stir in the flour mixture until only a few streaks of flour remain visible.
Add in the cornflakes, oatmeal and raisins. Mix until cookie dough is uniform.
·         Drop cookies by tablespoonfuls (1-inch balls, approx.) onto prepared cookie sheet. Gently flatten each with a fork (dipped in water to prevent sticking).
Bake for 10-12 minutes, until cookies are light gold all over.
 Let rest on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
